What a perfect treat for a crisp autumn Saturday morning! The quinoa and whole wheat flour gives these a healthy, hearty base, the pumpkin and spices give this a cozy autumn flavor, and the chocolate chips make them a little bit decadent. I had two of them warm out of the oven with a steaming cup of coffee — heaven! And the whole process took under an hour, including the baking.
