Basil and Ricotta Frittata

Beautiful on the pan, beautiful on the plate, and delicious on the palate!  Glistening under the basil and ricotta is a handful of grated parmesan, slowly melting in to the eggs, a nice rich sharpness delightfully complementing the herby freshness of the basil and creamy sweetness of the ricotta.  And all in, this took less than 15 minutes from start to finish!

A great brunch for one or two (depending on hunger levels!) or an easy dinner.  Use a smaller omelette pan if you want a thicker, more frittata (less omelette)-like consistency.  Enjoy!!
