Baked Oatmeal — a perfect end of summer brunch!

Baked Oatmeal — A perfect end of summer brunch!

A perfect end of summer brunch.

This was easy, fun, and delicious — a great way to wake up on a lazy Sunday morning. You don’t need any fancy ingredients, and nothing says end of summer like berries and cinnamon! Tasted great heated up the next morning too — brought a couple of pieces to work in tupperware, heated it for a minute in the microwave and enjoyed it with my Oren’s coffee — a nice change from the typical breakfast-at-your-desk.

It has a cobbler-esque feel to it — I could even see this tasting great as an afternoon or after dinner treat with a scoop of ice cream or gelato!

Prep time was about 20 minutes, and bake time was about 45 minutes, so you might need something to hold you over if you wake up starving.
